We are in the middle of Winter folks!

Winter is not my favorite season and I am getting anxious for warmer weather and flower planting! Hopefully the end of next month!

Until then let’s stay warm inside with some yummy comfort food!

I am loving my Instant Pot. So much that I purchased a second one when they went on sale on Black Friday.

Update Ramblings has a delicious Jambalaya recipe.

It feeds a crowd with leftovers the next day. If you haven’t tasted Jambalaya, try it!

Monday

Meatless Mondays are a regular rotation in our meal plan.

Not only is making a plant based meal healthier, it’s cost effective.

Lil Luna created a super easy and flavorful meal of Spinach Ricotta Stuffed Peppers.
You won’t miss the meat.

Tuesday

It’s Taco Tuesday!

This week Feel Good Foodie makes us delicious and easy Baked Chicken Tacos.
They look so delicious!

Wednesday

Hump day sometimes requires a comfort meal.
Red Lobster Crab Alfredo hits the spot.
Not too expensive to make either.

Thursday

I usually serve chicken on Thursdays.
Tonight is a dish with Asian flair.

Sesame Chicken tastes so much better than take out!

Friday

Friday is our take it easy night for dinner. Pigs in a Blanket is my go to meal that makes time for us to relax.

Saturday

Saturday night is usually reserved for going out or ordering take out.
It is a special treat we budget for ourselves. Dinner is followed by church or movie.

Saturday is my favorite day of the week!

Sweet Ending

This week’s Sweet Ending is a Fortner Family favorite.
Chocolate Cake with Peanut Butter Frosting.
My Dad’s favorite cake. He always requested it for his birthday, Enjoy!

Chocolate Cake with Peanut Butter Buttercream Frosting

A chocolate cake frosted with creamy buttercream peanut butter frosting!

Ingredients

Peanut Butter Buttercream Frosting

  • 1 stick butter, salted & softened
  • 1/2 cup creamy peanut butter
  • 2 tablespoons cocoa powder
  • 2 teaspoons vanilla extract
  • 3 cups powdered sugar
  • 2 tablespoons milk

Instructions

  • In a mixing bowl, beat with a mixer all ingredients until fluffy and creamy.
  • Frost 2 layer cake. Store in refrigerator.
    Enjoy!
